Adventures in cooking...Zucchini boats with caramelized tomatoes

I grew up with 2 parents who were very competent cooks, if not gourmet chefs, but somewhere between leaving home and now I never seemed to have their ingenuity and skill with cooking. The last year I have had more time off work than Nick, which has led me into the kitchen. I have learned that cooking is a soothing end to the hectic day and that I love every aspect of it, especially since I mostly cook with a glass or wine or beer... Occasionally I will share a great recipe or meal I tried out. I tried this one last week, it was surprisingly easy and was delicious.


Nick's parents gave us a ton of fresh veggies from their garden, so I went in search of a fun recipe to use them. I came across this Martha Stewart recipe for stuffed Zucchini, and boy was it good. I did adapt the recipe to my skills and veggie liking, the adaptations are noted in *.


Ingredients:
3 zucchini, halved lengthwise
1 tablespoon olive oil
1/2 onion, coarsely chopped
4oz Mediterranean* feta cheese (with herbs)
2 whole tomatoes cut thinly*
1/4 cup balsamic vinegar*


Time: just over an hour to make


Directions:
  1. Preheat oven to 475 degrees. Using a tablespoon, scoop out zucchini centers to form "canoes," leaving a 1/4-inch border. Roughly chop centers; set aside. 
  2. Arrange zucchini, cut sides down, on a rimmed baking sheet; bake 15 minutes. Remove from oven. Turn oven down to 375*
  3. Spray cookie sheet with olive oil. Lay down thin tomato slices, coat with balsamic. Place in over for 30-40 minutes at 375. Every 10 minutes baste with more balsamic. Tomatoes are done when caramelized.*

4. Meanwhile, heat oil in a large skillet over medium. Add onion; cook, stirring, until soft, 3 to 5 minutes. Add chopped zucchini, and cook, stirring, until most of the liquid has evaporated, about 8 minutes. Remove from heat; let cool slightly. Fold in feta. 

5. Turn hollowed-out zucchini cut sides up, fill with vegetable-feta mixture, and bake until top is lightly browned, about 20 minutes.
6. Top zucchini boats with caramelized tomatoes.*  Lift zucchini from baking sheet with a wide spatula, and serve.


The recipe calls for chopping cherry tomatoes up and adding to the zucchini boat mixture, but Nick and I are not a huge fan of tomatoes, and I didn't think we would really eat them if I cooked them this way. We both just discovered that we WILL eat deliciously caramelized tomatoes, so I just adapted the recipe for the way we would actually eat the tomatoes. I think it turned out much better and gave the zucchinis a sweet and tangy compliment. I thought they kind of tasted like zucchini pizza boats (but much healthier than pizza). I served the zucchini boats with some sausages to round out the meal.

No exciting photos, as I said my life consists of work, school, gym, sleep... I spent most my afternoons and all day on the weekends at the library, although I did take a break last weekend and head to SLO with Nick for his cousins Poly graduation and some hiking and brunch with my college friends, and exploring the Central Coast in between.
Note: If anyone is on the 101 and hungry or just wants to explore, I highly recommend stopping at the Cliff House Inn and Shoals Restaurant in Mussel Shoals (between Carpenteria and Ventura). We stopped for mussel appetizers, salads and dessert, and wine on our way home form SLO (delicious- we recommend the Santa Barbara Syrah). The view is to die for as well, just a piece of 1940s paradise off the 101.

Schooling Around

School has been great. I am truly excited about it. I was fortunate enough to get full Federal Loan funding (I am a bit fearful of my school debt, because I've never had it before, but I keep hearing school debt is good debt, let's just hope the USC name buys me a good job later on so I can pay them back!). I also was able to keep my marketing position on a part time basis (which helps with income). My life up to now has been work, study, gym, sleep.
My biggest worry is passing the CSET this summer (I have to pass it by September or I don't get to student teach and finish my degree on time), so that has been a lot of pressure. Especially since I am taking the multiple subject CSET which is everything, and I mean everything (reading, lit, history, science, math, pe, music, art, dram) you learned up to 8th grade, plus some things I never learned (as a business major) like reading development, human development, how to teach. Its daunting to review all the material, especially with a test looming over me, bu I am enjoying the material, which makes me feel I am on the right path with this career.
So please put me in your prayers this summer to pass the CSET, because I really do like what I am doing now

Starting Grad School

I realize it's been awhile (about 6 months) since I last posted. I decided that I did indeed miss blogging and now that I am in a better place (mentally) I decided to start this up again. Upon returning for Argentina last summer I dove right into the job search for a marketing position. By November I landed my self at a software company that links big software together to run nuclear power plants, refineries, oil rigs, factories, etc... It sounds cool but is really technical and boring. I landed the Marketing Manager position and then learned I was the WHOLE marketing department and had to build my position from scratch (a daunting task for a newbie in marketing). After a few months I realized a) I was really bored, b) sitting in a cubicle was suffocating, c) trade shows are no fun to attend and be on your feet for 12 hours smiling and pushing your product on mostly fat oil and utility moguls who were just there to eat and get the free stuff, d) Most jobs I started to apply to (and I applied to a ton after 2 months in my first position) were boring as well and required way too much time in a cubicle, alone. These were not good positions for as social and active of a person like me. So, I did some soul searching (I was supposed to do this in Argentina, which I did, but never came to an answer) and I realized that while I enjoyed my marketing internship at VOS in Buenos Aires, that I enjoyed learning and being in a school environment much more.
So..........after much deliberation and advice from Mom, Nick and friends I decided to finally pursue a teaching credential (yes, many of you out there are like, FINALLY, and I told you so). One stipulation was that if I did go back to school I wanted to do it right which meant I didn't just want to go back for a credential but a Masters as well. USC offers an online (virtual) Masters in Teaching program with a credential in 1 year (great deal). So I applied in March and got in in April. I officially started my program in May and I am loving it so far.............
